Marinated Tomatoes
Ingredients
- 24 cherry tomatoes, blanched, or 4 tomatoes, sliced (see note)
- 1/2 cup (125 ml) water
- 1/2 cup (125 ml) white wine vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 thyme sprig
- 1 bay leaf
Instructions
- Place the tomatoes in a 2-cup (500 ml) glass jar.
- In a small pot, bring the remaining ingredients to a boil. Simmer for 5 minutes. Strain the hot liquid through a sieve and let cool.
- Pour the liquid over the tomatoes. Cover and let macerate for 12 hours in the refrigerator. The marinated tomatoes are delicious in a sandwich or salad.
