Light Caesar Salad
Ingredients
- 2 cups (100 g) bread, diced
- 2 tbsp (30 ml) olive oil
- 4 thin slices smoked ham, cut into thin strips
- 1 head romaine lettuce (or 2 hearts), torn into pieces
- 1/4 cup (20 g) Parmesan cheese, freshly grated
- 6 oz (170 g) soft tofu
- 2 tbsp (30 ml) lemon juice
- 2 tbsp capers, rinsed and finely chopped
- 1 tbsp (15 ml) olive oil
- 1 small garlic clove, finely chopped
- 1 tsp (5 ml) anchovy paste
Instructions
- In a skillet over medium-high heat, brown the bread in half of the oil. Set aside.
- In the same skillet, brown the ham in the remaining oil until crisp. Drain on paper towels. Set aside.
