Italian-Style Mushrooms
Ingredients
- 1 cup (250 ml) water
- 1 cup (250 ml) white wine vinegar
- 1 tsp peppercorns, plus more for the jars
- 1/2 tsp salt
- 4 garlic cloves, peeled
- 5 juniper berries
- 3 cloves
- 2 bay leaves, plus more for the jars
- 2 sprigs thyme, plus more for the jars
- 2.2 lb (1 kg) small whole mushrooms (chanterelles, porcini, white, cremini), cleaned
- 2 cups (500 ml) olive oil, approximately
Instructions
- In a saucepan, bring the water, vinegar, pepper, salt, garlic, juniper berries, cloves, bay leaves and thyme to a boil. Add the mushrooms. Using a spoon, immerse the mushrooms in the marinade. Cook for 3 minutes on high heat. Reduce the heat and simmer for 10 to 15 minutes or until the mushrooms are tender. Drain the mushrooms and discard the cooking liquid. Cool the mushrooms to room temperature.
- Divide the mushrooms among sterilized jars along with a few peppercorns, bay leaves and sprigs of thyme in each jar. Completely cover with oil. Seal.
- Let the mushrooms marinate in the refrigerator for 15 days before serving.
