Homemade Breadcrumbs

Ingredients

  • 8 cups (400 g) cubed day-old bread

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. Place the bread cubes on the prepared baking sheet. Bake for 20 minutes or until very dry.
  3. In a food processor, coarsely chop the dried bread cubes. Return the breadcrumbs to the baking sheet and continue to dry out in the oven for 10 minutes (see note).
  4. In the food processor, pulse the breadcrumbs until fine or to the desired texture. Return to the baking sheet and let cool at room temperature.
  5. The breadcrumbs will keep for several weeks stored in a cool, dry place in an airtight container.
