Herb and Chili Pepper Sauce (Zhoug)
Ingredients
- 1 ½ cups (55 g) cilantro leaves and stems
- ½ cup (15 g) flat-leaf parsley leaves
- 1 garlic clove, halved
- 1 jalapeño pepper, seeded and chopped
- 6 tbsp (90 ml) olive oil
- ¼ cup (60 ml) water
- 1 tsp ground cumin
- ½ tsp sugar
- ½ tsp salt
- ¼ tsp ground cardamom
- 1 pinch ground cloves
Instructions
- In a blender, purée all of the ingredients into a fairly smooth paste.
- Transfer to an airtight container. The zhoug will keep for 3 days in the refrigerator. Delicious served with white fish or with our corncob papillote with spice butter.
