Grilled Vegetable Trio with Garlic
Ingredients
- 1/4 cup (60 ml) olive oil
- 2 cloves garlic, finely chopped
- 1 large sweet potato, scrubbed and cut lengthwise into 1/4-inch (1/2-cm) slices
- 1 large russet potato, scrubbed and cut lengthwise into 1/4-inch (1/2-cm) slices
- 1 butternut squash (narrow part only), cut into 1/4-inch (1/2-cm) slices and peeled
- Salt and pepper
- Parsley
Instructions
- Preheat the gas grill, setting the burners to medium.
- In a large bowl, combine the oil and garlic. Add the vegetables and mix well.
- Season with salt and pepper.
- Grill the vegetables until tender, 6 to 8 minutes per side.
