Grilled Pita with Green Vegetables
Ingredients
- 1 cup (250 ml) frozen peas, thawed
- 1/4 cup (60 ml) vegetable oil
- 1 teaspoon (5 ml) honey
- 1 teaspoon (5 ml) lemon juice
- Salt and pepper
- 1 cup (250 ml) asparagus cut into about 1-inch (2.5-cm) pieces (mostly tips)
- 1 cup (250 ml) frozen shelled edamame, thawed
- 1 shallot, thinly sliced
- 3 tablespoons (45 ml) olive oil
- 1 clove garlic, finely chopped
- 1 teaspoon (5 ml) honey
- 2 tablespoons (30 ml) lemon juice
- 2 cups (500 ml) arugula
- 4 pita breads
- Olive oil, for brushing
Instructions
- In a small food processor, purée all the ingredients until smooth. Season with salt and pepper. Set aside.
