Grilled Pita with Green Vegetables

Ingredients

  • 1 cup (250 ml) frozen peas, thawed
  • 1/4 cup (60 ml) vegetable oil
  • 1 teaspoon (5 ml) honey
  • 1 teaspoon (5 ml) lemon juice
  • Salt and pepper
  • 1 cup (250 ml) asparagus cut into about 1-inch (2.5-cm) pieces (mostly tips)
  • 1 cup (250 ml) frozen shelled edamame, thawed
  • 1 shallot, thinly sliced 

  • 3 tablespoons (45 ml) olive oil
  • 1 clove garlic, finely chopped
  • 1 teaspoon (5 ml) honey
  • 2 tablespoons (30 ml) lemon juice
  • 2 cups (500 ml) arugula
  • 4 pita breads
  • Olive oil, for brushing 




Instructions

  1. In a small food processor, purée all the ingredients until smooth. Season with salt and pepper. Set aside.
