Greens with Goat Cheese and Fruits
Ingredients
- 1/4 cup (60 ml) slivered almonds
- 2 small zucchini, thinly sliced lengthwise
- 2 tablespoons (30 ml) olive oil
- 1/2 cup (125 ml) sunflower oil
- 2 teaspoons (10 ml) balsamic vinegar
- 1 teaspoon (5 ml) honey
- 2 tablespoons (30 ml) fresh chives, chopped
- Salt and pepper
- 4 cups (1 litre) arugula or baby spinach
- 1 log 200 g goat cheese, crumbled
- 1 cup (250 ml) fresh raspberries
Instructions
- In a nonstick skillet, toast the almonds. Set aside.
- In a ridged skillet, grill the zucchini in the olive oil. Set aside.
- In a bowl, whisk together the oil, vinegar, honey, chives, salt and pepper.
- Divide the greens on 6 plates, then the cheese, zucchini, raspberries and almonds. Drizzle with the vinaigrette and serve.
