Green Zucchini Relish
Ingredients
- 6 medium green zucchini, cut into large cubes
- 2 medium onions, quartered
- 1 red bell pepper, seeded and cut into large cubes
- 3 tbsp coarse sea salt
- 1 1/4 cups (265 g) sugar
- 1 cup (250 ml) white vinegar
- 1 1/2 tsp cornstarch
- 1 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp nutmeg
- 1/2 tsp dry mustard
- 1/2 tsp celery salt
- 1/4 tsp black pepper
Instructions
- In a food processor, finely chop the zucchini and place in a large bowl. Finely chop the onions and bell pepper. Transfer to the same bowl.
- Add the coarse salt to the bowl of vegetables and mix well. Cover and refrigerate for 12 hours.
- Place the vegetables in a large fine-mesh sieve and rinse well under cold running water. Place the vegetables between two layers of cheesecloth and press firmly to extract as much water as possible.
- Transfer the vegetables to a pot. Add the remaining ingredients. Bring to a boil. Simmer over medium heat for 25 minutes, stirring a few times.
- Pour the relish into airtight containers or hot sterilized jars (see note). Let cool. Refrigerate. Delicious with burgers or hot dogs.
