Green Bean Remoulade

Ingredients

  • 1 lb (454 g) green beans, trimmed
  • 2 tbsp (30 ml) mayonnaise
  • 2 tsp (10 ml) Dijon mustard
  • 2 tsp (10 ml) white wine vinegar
  • 1 tsp capers, finely chopped
  • ½ tsp (2.5 ml) prepared horseradish
  • 2 green onions, thinly sliced

Instructions

  1. In a pot of salted boiling water, cook the green beans for 4 to 5 minutes or until tender. Drain and plunge into ice water. Drain well.
  2. On a work surface, split the beans lengthwise, if desired (see note).
  3. In a large bowl, combine the mayonnaise, mustard, vinegar, capers and horseradish. Add the beans. Season with salt and pepper and toss well. Transfer onto a large serving platter. Garnish with green onions.
