Fruit and Sea Buckthorn Chutney
Ingredients
- 1 1/2 cups (375 ml) small pearl onions, peeled
- 2 tablespoons (30 ml) butter
- 1 cup (250 ml) apple cider vinegar
- 1 cup (250 ml) brown sugar
- 2 Cortland apples, peeled and diced
- 2 peaches, peeled and diced
- 1 red bell pepper, seeded and diced
- 2 stalks celery, diced
- 2 cloves garlic, finely chopped
- 2 tablespoons (30 ml) grated ginger
- 1 pinch ground cloves
- 1 pinch Cayenne pepper
- 2 cups (500 ml) sea buckthorn berries
- Salt and pepper
Instructions
- In a saucepan, brown onions in butter. Season with salt and pepper. Add remaining ingredients, except for sea buckthorn berries. Bring to a boil and simmer for 20 minutes. Add berries and cook for 5 minutes or until fruit is cooked and liquid is syrupy. Adjust seasoning.
