Fried Tofu and Dashi-Style Broth (Agedashi Tofu) 



Ingredients

  • 1/2 cup (125 ml) chicken broth
  • 1/4 cup (60 ml) soy sauce
  • 2 tablespoons (30 ml) fish sauce (nuoc mam)
  • 2 tablespoons (30 ml) rice vinegar
  • 2 tablespoons (30 ml) honey
  • 1/2 cup (125 ml) unbleached all-purpose flour
  • 2 eggs, lightly beaten
  • 1 1/2 cup (375 ml) Japanese-Style breadcrumbs (Panko)
  • A block about 300 g soft tofu, cut into 16 pieces 

  • Oil, for frying 

  • 1 green onion, thinly sliced
  • Fresh cilantro leaves, to taste
  • Dried bonito flakes (optional) (see note)

Instructions

  1. In a small saucepan, bring all the ingredients to a boil. Keep warm.
