Fried Tofu and Dashi-Style Broth (Agedashi Tofu)
Ingredients
- 1/2 cup (125 ml) chicken broth
- 1/4 cup (60 ml) soy sauce
- 2 tablespoons (30 ml) fish sauce (nuoc mam)
- 2 tablespoons (30 ml) rice vinegar
- 2 tablespoons (30 ml) honey
- 1/2 cup (125 ml) unbleached all-purpose flour
- 2 eggs, lightly beaten
- 1 1/2 cup (375 ml) Japanese-Style breadcrumbs (Panko)
- A block about 300 g soft tofu, cut into 16 pieces
- Oil, for frying
- 1 green onion, thinly sliced
- Fresh cilantro leaves, to taste
- Dried bonito flakes (optional) (see note)
Instructions
- In a small saucepan, bring all the ingredients to a boil. Keep warm.
