Fried Oyster Salad
Ingredients
- Oil, for frying
- The meat from 24 choice oysters
- All-purpose flour
- 8 cups (2 litres) mixed greens
- 1 cup (250 ml) all-purpose flour
- 1/2 cup (125 ml) beer
- 1 egg
- 1 tablespoon (15 ml) melted butter
- Salt and pepper
- 3 shallots, chopped
- 1/2 cup (125 ml) olive oil
- 3 tablespoons (45 ml) red wine vinegar
- 1 cup (250 ml) pineapple, cut into small dice
- 1/2 red pepper, cut into small dice
- Salt and pepper
Instructions
- In a bowl, combine all the ingredients until smooth. Let the batter rest for 1 hour at room temperature.
