Fried Olives
Ingredients
- 24 large green olives, pitted
- 2 oz (50 g) Fresh Parmesan or Grana Padano cheese, cut into 24 pieces (see note)
- 1/3 cup (50 g) unbleached all-purpose flour
- 1 egg, lightly beaten
- 1/3 cup (40 g) breadcrumbs pr panko
Instructions
- Preheat the oil in a deep fryer to 375°F (190°C). Line a large plate with a paper towel.
- Rinse the olives if they are too salty. Drain and dry thoroughly. Stuff the olives with the cheese. Set aside.
- In a shallow dish, place the flour. In a second shallow dish, lightly beat the egg. In a third shallow dish, place the breadcrumbs.
- Dip the olives into the beaten egg, letting the excess drip off. Then dredge them in the flour, shaking off any excess. Dip again in the egg, letting the excess drip off. Finally, coat with breadcrumbs.
- Fry the olives, eight at a time, for 2 to 3 minutes or until golden brown. Watch out for splattering. Drain on the paper towel-lined plate. Serve immediately.
