Fresh Herb and Oat Soup
Ingredients
- 1 ½ cups (55 g) cilantro stems and leaves, coarsely chopped
- ½ cup (15 g) flat-leaf parsley leaves
- 4 garlic cloves, halved
- 1 onion, chopped
- 3 tbsp (45 ml) olive oil
- 1 tbsp curry powder
- 2 tsp sweet paprika
- ½ tsp ground cumin
- 8 cups (2 litres) chicken broth
- 1 cup (180 g) steel-cut oats, rinsed and drained (see note)
- Plain yogurt, to taste
- Mint leaves, finely chopped, to taste
- Honey, to taste
Instructions
- In a food processor, finely chop the cilantro, parsley and garlic.
- In a pot over medium heat, soften the onion in the oil for 3 minutes. Add the spices and herb mixture. Cook for 1 minute while stirring. Add the broth and oats. Bring to a boil. Simmer for 25 minutes or until the oats are tender. Season with salt and pepper. Remove from the heat. Let sit for 5 minutes to allow the oats to continue to plump up and the soup to thicken.
- Serve the soup in bowls. Garnish with the yogurt, mint and a drizzle of honey.
