Fresh Herb and Oat Soup

Ingredients

  • 1 ½ cups (55 g) cilantro stems and leaves, coarsely chopped
  • ½ cup (15 g) flat-leaf parsley leaves
  • 4 garlic cloves, halved
  • 1 onion, chopped
  • 3 tbsp (45 ml) olive oil
  • 1 tbsp curry powder
  • 2 tsp sweet paprika
  • ½ tsp ground cumin
  • 8 cups (2 litres) chicken broth
  • 1 cup (180 g) steel-cut oats, rinsed and drained (see note)
  • Plain yogurt, to taste
  • Mint leaves, finely chopped, to taste
  • Honey, to taste

Instructions

  1. In a food processor, finely chop the cilantro, parsley and garlic.
  2. In a pot over medium heat, soften the onion in the oil for 3 minutes. Add the spices and herb mixture. Cook for 1 minute while stirring. Add the broth and oats. Bring to a boil. Simmer for 25 minutes or until the oats are tender. Season with salt and pepper. Remove from the heat. Let sit for 5 minutes to allow the oats to continue to plump up and the soup to thicken.
  3. Serve the soup in bowls. Garnish with the yogurt, mint and a drizzle of honey.
