Flaxseed Pesto
Ingredients
- 4 cups (1 litre) loosely packed basil leaves, rinsed and patted dry
- 3 cloves garlic
- 1/4 cup (60 ml) pine nuts, toasted
- 2 tablespoons (30 ml) flax seed, grinded
- 1/2 cup (125 ml) grated Parmigiano-Reggiano cheese
- 1/2 cup (125 ml) olive oil
- Salt and pepper
Instructions
- In a food processor, finely chop the basil, garlic, pine nuts, flax seeds and cheese. Pour the oil in a stream until the mixture is creamy and slightly grainy.
- Season with salt and pepper.
