Fennel and Green Apple Salad
Ingredients
- 1 tbsp (15 ml) olive oil
- 1 ½ tsp (7.5 ml) apple cider vinegar
- 1 ½ tsp (7.5 ml) maple syrup
- 1 fennel, thinly sliced on a mandoline
- 1 green apple, thinly sliced on a mandoline
- Pea shoots, to taste
Instructions
- In a large bowl, combine the olive oil, vinegar and maple syrup. Season with salt and pepper.
- Add the fennel and green apple to the bowl of dressing and mix well. Add the pea shoots. Adjust the seasoning. Delicious served alongside our edamame and cilantro veggie pâté.
