Fattoush (Pita Bread Salad)
Ingredients
- 2 pita breads
- 3 tomatoes, diced
- 4 green onions, finely chopped
- 1 yellow bell pepper, finely chopped
- 1 small head romaine lettuce, shredded
- 1/4 cup (60 ml) fresh parsley, chopped
- 1 English cucumber, diced
- 1/4 cup (60 ml) whole black olives
- The juice of 1 lemon
- 1 clove garlic, finely chopped
- 1/2 cup (125 ml) olive oil
- 2 teaspoons (10 ml) fresh mint, chopped
- 1 teaspoon (5 ml) fresh thyme, chopped
- Salt and pepper
Instructions
- With the rack in the middle position, preheat the oven to 180 °C (350 °F).
- Place the bread on a baking sheet and bake for about 15 minutes or until crisp. Let cool then break into pieces.
- In a bowl, combine all the salad ingredients, including the pita pieces.
- In a bowl, whisk together all the vinaigrette ingredients.
- Pour the vinaigrette over the salad. Toss to coat and serve immediately.
