Cucumber Martinis
Ingredients
- 1/2 English cucumber, cut into chunks
- 4 cherry tomatoes with stems
- 4 half slices of cucumber, 3/4 inch (2 cm) thick
- 1 tablespoon (15 ml) fresh cilantro
- 2 tablespoons (30 ml) salt
- 1 lime wedge
- 1/2 cup (125 ml) vodka
- 1 cup (250 ml) dry vermouth
- Ice cubes
- 4 martini glasses
- 4 large toothpicks
Instructions
- Purée the cucumber chunks in a blender, 2 or 3 minutes. Pour into a strainer set over a bowl and let drain without pressing; you should have 60 ml (1/4 cup) of juice. Set aside.
- Skewer 1 tomato and 1 half slice of cucumber on each toothpick. Set aside.
- On a cutting board, finely chop the cilantro with the salt until the salt is green. Transfer to a shallow bowl.
- Moisten the rim of each glass with the lime wedge, then dip the rims into the cilantro salt.
- Put the cucumber juice, vodka, vermouth and ice in a cocktail shaker and shake vigorously. Strain into the martini glasses. Garnish with the vegetable skewers.
