Cucumber and Pineapple Relish
Ingredients
- 3 tablespoons (45 ml) coarsely chopped shallot
- 1 English cucumber, seeded and chopped
- 1/4 pineapple, peeled and finely chopped (about 375 ml / 1 1/2 cups)
- 3 tablespoons (45 ml) rice vinegar
- 1 tablespoon (15 ml) sugar
- Salt and pepper
Instructions
- In a food processor, chop all the ingredients. Cover and marinate in the refrigerator for 30 minutes.
- Delicious on hamburgers and to garnish white fish or grilled pork chops.
