Creamy Coleslaw with Broccoli Stems
Ingredients
- 4 cups (340 g) green cabbage, thinly sliced on a mandoline
- 3 broccoli stems, peeled and thinly sliced into rounds on a mandoline
- 2 carrots, peeled and thinly sliced into rounds on a mandoline
- ⅓ cup (75 ml) apple cider vinegar
- ½ tsp salt
- ½ cup (125 ml) mayonnaise
- ½ cup (125 ml) sour cream
- 2 tbsp (30 ml) whole-grain mustard
- 1 tbsp (15 ml) Dijon mustard
- 1 tsp onion powder
- ½ tsp dried dill
Instructions
- In a large bowl, combine the vegetables, vinegar and salt. Season with pepper. Massage with your hands for a few seconds. Let marinate for 15 minutes.
- Add the remaining ingredients and mix well. Adjust the seasoning.
