Creamy Coleslaw with Broccoli Stems

Ingredients

  • 4 cups (340 g) green cabbage, thinly sliced on a mandoline
  • 3 broccoli stems, peeled and thinly sliced into rounds on a mandoline
  • 2 carrots, peeled and thinly sliced into rounds on a mandoline
  • ⅓ cup (75 ml) apple cider vinegar
  • ½ tsp salt
  • ½ cup (125 ml) mayonnaise
  • ½ cup (125 ml) sour cream
  • 2 tbsp (30 ml) whole-grain mustard
  • 1 tbsp (15 ml) Dijon mustard
  • 1 tsp onion powder
  • ½ tsp dried dill

Instructions

  1. In a large bowl, combine the vegetables, vinegar and salt. Season with pepper. Massage with your hands for a few seconds. Let marinate for 15 minutes.
  2. Add the remaining ingredients and mix well. Adjust the seasoning.
