Cream of Sweet Potato, Apple and Clove Soup

Ingredients
- 1 leek, white part only, chopped
- 3 tbsp butter
- 1 apple, peeled, seeded and cubed
- 3 medium sweet potatoes, peeled and cubed
- 1/4 cup (60 ml) white wine or chicken broth
- 5 cups (1.25 litres) chicken broth
- 1/8 teaspoon ground cloves
- Apple slices, for garnish
Instructions
- In a pot over medium-high heat, soften the leek in the butter. Add the apple and sweet potatoes. Deglaze with the white wine.
- Add the chicken broth and ground cloves. Bring to a boil. Cover and simmer until the sweet potatoes are tender, about 20 minutes.
- Purée in a blender until smooth. Season with salt and pepper.
- Ladle the soup into bowls. Garnish with apple slices sautéed in butter, if desired
