Cream of Carrot Soup with Tahini and Broccoli
Need a cozy soup for fall? Your bumper crop of carrots creates this puréed version topped with a tangy tahini sauce.
Ingredients
- 2 tbsp (30 ml) water
- 2 tbsp (30 ml) tahini
- 1 tsp (5 ml) honey
- 1 tsp (5 ml) lemon juice
- 1 onion, chopped
- 2 tbsp (30 ml) olive oil
- 4 cups (520 g) carrots, peeled and cut into rounds
- 1 potato, peeled and cubed
- 6 cups (1.5 litres) chicken broth
- ½ tsp ground cumin
- 1 cup (85 g) broccoli, blanched and chopped
- 1 tbsp roasted sesame seeds
Instructions
- In a bowl, combine all of the ingredients. Set aside.
