Country-style Savoy Cabbage Soup
Ingredients
- 1 small Savoy Cabbage, shredded
- 2 cloves garlic, finely chopped
- 1 /4 cup (60 ml) chicken broth
- 2 tablespoons (30 ml) olive oil
- 4 slices country bread
- 1 clove garlic, halved
- 8 slices cheddar cheese (about 200 g / 8 oz)
- 8 slices Fontina cheese (about 200 g / 8 oz)
- 7 cups (1.75 litres) chicken broth, hot
- Pepper
Instructions
- In a saucepan, cook the cabbage, garlic, broth and oil on low heat. Cover and simmer for 10 minutes. Stir occasionally.
- Preheat the oven to 180 °C (350 °F).
- Toast the bread and rub it with garlic.
- In an earthenware pot (preferably), arrange the bread evenly.
- Sprinkle the cheese, add the braised cabbage, pour the hot broth and season with pepper.
- Bake for about 30 minutes. Serve hot.
