Clementine Rum Punch with Flavoured Ice Rings
Ingredients
- 1 cup (250 ml) water
- 1 vanilla bean, split lengthwise and seeds scraped
- 1 cinnamon stick
- 1 star anise
- 1 cup (250 ml) ice cubes
- 1 lime, cut into thin rounds, then each round cut into 4
- ½ cup (100 g) ground cherries, halved
- ½ cup (55 g) fresh or frozen cranberries
- 4 cups (1 litre) clementine soda, cold
- 2 cups (500 ml) dark rum
- ¾ cup (180 ml) orange liqueur
- ¾ cup (180 ml) Campari
- ¼ cup (60 ml) lime juice
- 3 cups (750 ml) ice cubes
Instructions
- In a small pot, bring the water, vanilla pod and seeds, cinnamon and star anise to a boil. Strain into a 2-cup (500 ml) measuring cup. Add the ice cubes and let the water mixture cool. Cut the vanilla pod into 12 pieces. Compost the cinnamon stick and star anise.
- In a 12-cavity doughnut pan, divide the lime, ground cherries, cranberries and vanilla pod pieces among the cavities. Fill with the chilled water mixture. Add more water, as needed. Freeze for 6 hours (see note).
