Cheese Churros

Originally from Spain, churros are usually served sweet, for breakfast or dessert. Revisit this tradition with a savoury version for the aperitif. A twisted doughnut that gets all gooey and crunchy when fried. This original canapé made with Gruyère and Parmesan is the perfect salty snack!

Ingredients

  • 2 tbsp fresh Parmesan cheese, finely grated
  • 2 tbsp flat-leaf parsley, finely chopped
  • 1/4 tsp cayenne pepper, or more to taste
  • 1/4 cup (60 ml) milk
  • 1/4 cup (60 ml) water
  • 2 tbsp butter
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1/2 cup (75 g) unbleached all-purpose flour
  • 2 eggs
  • 3/4 cup (75 g) Gruyère cheese, finely grated (see note)
  • Vegetable oil, for frying

  1. In a small bowl, combine all of the ingredients. Set aside (see note).
