Cheddar Cheese Potatoes

These potatoes are easy to prepare and are a great side dish to any meat or poultry. Featured in the book Ma cuisine week-end Book (French Version)

Ingredients

  • 8 potatoes, peeled
  • 1/3 cup (75 ml) olive oil
  • 1/4 cup (10 g) fresh chives, finely chopped
  • 1 cup (100 g) strong cheddar cheese, grated
  • 1/4 cup (30 g) breadcrumbs
  • Pink peppercorn, crushed, to tasted

Instructions

  1. With the rack in the middle position, preheat the oven to 375°F (190°C).
  2. On a work surface, cut the potatoes in half lengthwise. Turn them so they are flat-side down on the work surface. Using a knife, slice the potatoes without cutting completely through them (see note).
  3. In a bowl, combine the potatoes, oil and chives, making sure the oil coats between each slice in the potatoes. Season with salt and pepper. Transfer the potatoes to a non-stick or parchment paper-lined baking sheet. Bake for 35 minutes, basting the potatoes several times with the remaining oil.
  4. Sprinkle with cheese and breadcrumbs. Continue baking for 15 minutes or until the cheese is golden brown. Serve with meat or poultry, if desired.
