Ingredients
- 1/4 cup (55 g) unsalted butter
- 1/4 cup (25 g) pecans
- 1/4 cup (10 g) sage leaves
- 1 egg yolk
- 1 tbsp (15 ml) water
- 1 cup (150 g) unbleached all-purpose flour
- 1/2 cup (65 g) spelt flour (see note)
- 1 tsp sugar
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup (125 ml) cold water
- Fleur de sel, to taste
Instructions
- In a small pot over medium heat, melt the butter. Add the pecans and sage. Cook until the butter starts to brown and stops foaming. Immediately pour into the bowl of a food processor. Do not strain the brown butter. Let cool for 10 minutes.
- Meanwhile, with the rack in the middle position, preheat the oven to 400°F (200°C). Line two baking sheets with silicone mats or parchment paper.
