Broiled Root Vegetables with Turmeric
Ingredients
- 2 tbsp (30 ml) olive oil
- 4 tsp turmeric
- 2 garlic cloves, finely chopped
- 3 cups (510 g) potatoes, peeled and cubed
- 3/4 lb (340 g) rutabaga, peeled and cut into sticks
- 2 1/2 cups (325 g) carrots, cut into 1/2-inch (1 cm) slices on an angle
Instructions
- With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with foil.
- In a large bowl, combine the oil, turmeric and garlic. Add the vegetables and toss to coat well. Season with salt and pepper. Spread the vegetables out on the baking sheet.
- Bake for 35 minutes or until the vegetables are tender, turning them over halfway through cooking.
- Turn on the broiler. Broil the vegetables for a few minutes until nicely browned.
