Broiled Root Vegetables with Turmeric

Ingredients

  • 2 tbsp (30 ml) olive oil
  • 4 tsp turmeric
  • 2 garlic cloves, finely chopped
  • 3 cups (510 g) potatoes, peeled and cubed
  • 3/4 lb (340 g) rutabaga, peeled and cut into sticks
  • 2 1/2 cups (325 g) carrots, cut into 1/2-inch (1 cm) slices on an angle

Instructions

  1. With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with foil.
  2. In a large bowl, combine the oil, turmeric and garlic. Add the vegetables and toss to coat well. Season with salt and pepper. Spread the vegetables out on the baking sheet.
  3. Bake for 35 minutes or until the vegetables are tender, turning them over halfway through cooking.
  4. Turn on the broiler. Broil the vegetables for a few minutes until nicely browned.
