Blackberry Spritz
The famous English liqueur brand Pimm’s makes a delicious blackberry spirit you can’t get in Canada, so we recreated the flavour with this quick homemade syrup. A true spritz needs bitters and bubbles: we added some Pimm’s No. 1—which is sold here—for the bitters, and topped it with Prosecco. It’s the perfect reminder summer isn’t over…yet.
Ingredients
- 1/2 cup (70 g) blackberries
- 1/4 cup (55 g) sugar
- 1/4 cup (60 ml) water
- Ice, as desired
- Blackberries, as desired
- 8 oz (250 ml) Prosecco
- 2 1/2 oz (75 ml) Pimm’s No. 1
Instructions
- In a small pot over medium heat, bring to a boil the 1/2 cup of blackberries, the sugar and the water. Let simmer for 5 minutes. Strain the syrup through a sieve and refrigerate for 1 hour or until completely chilled. Half-fill two large 1 3/4 cup (430 ml) wine glasses with ice and a few blackberries. Divide the syrup between the two glasses, add the Prosecco and the Pimm’s No. 1 and stir with a spoon.
