Berry Butter
Leftover fruit in the freezer? Here’s how to use them!
Ingredients
- 3/4 cup (100 g) frozen mixed berries (such as blueberries, raspberries, strawberries, etc.), thawed
- 1/2 cup (115 g) unsalted butter, softened
- 1/2 cup (65 g) icing sugar
- 1 tbsp (15 ml) lemon juice
Instructions
- Press the fruits into a sieve to extract as much liquid as possible. Reserve the liquid for another use.
- In a food processor, cream the butter and sugar. Add the pressed fruits and lemon juice. Blend until well combined and smooth. Use a spatula to scrape down the sides of the food processor as needed.
- On a slightly wet work surface, lay out a piece of plastic wrap. Spread the butter over the centre of one end of the plastic wrap, leaving a clean border on either side. Tightly roll the plastic wrap around the butter to form a cylinder about 1 inch (2.5 cm) in diameter. Make a knot at both ends of the plastic wrap to seal in the butter. Refrigerate for 2 hours or until the butter is firm.
- Remove the plastic wrap. On a work surface, using a hot knife, cut the butter into rounds. Melt the berry butter over pancakes, waffles or French toast, or spread over slices of toasted bread.
