Arugula Salad with Jalapeno Vinaigrette
Ingredients
- 1/4 cup (60 ml) lime juice
- 1/4 cup (60 ml) olive oil
- 1/4 cup (60 ml) fresh coriander, finely chopped
- 2 green onions, finely sliced
- 1/2 jalapeño, seeded and finely chopped
- 1 clove garlic, finely chopped
- 1 tablespoon (15 ml) honey
- Salt and pepper
- 12 cups (3 litres) arugula
- 2 tomatoes, seeded and cut into 16 wedges
- 1 mango, peeled and thinly sliced
Instructions
- In a bowl, blend all the ingredients with a whisk. Season with salt and pepper.
