Apple, Walnut, and Bacon Green Salad

Ingredients

  • 1/2 cup (125 ml) maple syrup
  • 2 tbsp butter
  • 1 cup (100 g) walnuts or pecans, toasted
  • 1/4 cup (60 ml) mayonnaise
  • 3 tbsp (45 ml) olive oil
  • 2 tbsp (30 ml) cider or white wine vinegar
  • 2 tbsp (30 ml) maple syrup
  • 1 tsp (5 ml) Dijon mustard
  • ½ garlic clove, finely chopped
  • ½ red onion, very thinly sliced
  • 6 cups (140 g) mesclun lettuce
  • 1 Cortland apple or pear, peeled, cored, and thinly sliced
  • 4 slices bacon, cooked and chopped

Instructions

  1. Line a baking sheet with a silicone mat or parchment paper.
  2. In a small pot, bring the maple syrup and butter to a boil. Cook for 2 minutes. Add walnuts. Cook, stirring with a wooden spoon, until the sugar crystallizes (becomes grainy) on the nuts. Remove from the heat.
  3. Immediately spoon on the baking sheet. With a spatula, quickly spread the nuts. Season lightly with salt. Let cool completely. Roughly crush with a knife.
