Apple, Walnut, and Bacon Green Salad
Ingredients
- 1/2 cup (125 ml) maple syrup
- 2 tbsp butter
- 1 cup (100 g) walnuts or pecans, toasted
- 1/4 cup (60 ml) mayonnaise
- 3 tbsp (45 ml) olive oil
- 2 tbsp (30 ml) cider or white wine vinegar
- 2 tbsp (30 ml) maple syrup
- 1 tsp (5 ml) Dijon mustard
- ½ garlic clove, finely chopped
- ½ red onion, very thinly sliced
- 6 cups (140 g) mesclun lettuce
- 1 Cortland apple or pear, peeled, cored, and thinly sliced
- 4 slices bacon, cooked and chopped
Instructions
- Line a baking sheet with a silicone mat or parchment paper.
- In a small pot, bring the maple syrup and butter to a boil. Cook for 2 minutes. Add walnuts. Cook, stirring with a wooden spoon, until the sugar crystallizes (becomes grainy) on the nuts. Remove from the heat.
- Immediately spoon on the baking sheet. With a spatula, quickly spread the nuts. Season lightly with salt. Let cool completely. Roughly crush with a knife.
