Line the basket of an air fryer with parchment paper (see note).

In a shallow dish, place the flour. Season with salt and pepper. In a second shallow dish, lightly beat the egg. In a third shallow dish, place the breadcrumbs.

Dredge the goat cheese rounds in the flour, shaking of any excess. Dip into the beaten eggs, letting some of the excess drip off. Press into the breadcrumbs. Dip a second time into the beaten eggs, then into the breadcrumbs. Place on a plate.

Using a pastry brush, coat the goat cheese with the oil on both sides.

Place the goat cheese in the basket of the air fryer, evenly spaced out. Cook for 4 minutes at 375°F (190°C). Flip the goat cheese over and spread the pecans out in the basket around the cheese. Cook for another 4 minutes or until the goat cheese rounds are nicely browned.

Remove the cheese and pecans from the basket. On a work surface, chop the pecans.
