Crispy Fish Fillets with Shredded Wheat
Ingredients
- 1/2 cup (125 ml) mayonnaise
- 1 tbsp sour pickles, chopped
- 1 tbsp (15 ml) lime juice
- 1 tsp capers, chopped
- 1 tsp fresh chives, finely chopped
- 1/2 cup (75 g) unbleached all-purpose flour
- 3 eggs
- 2 cups (90 g) shredded wheat, crumble (4 shredded wheats)
- 4 6 oz (170 g) fillets of white fish (pangasius, tilapia, etc), halved lengthwise
- 1/4 cup (60 ml) olive oil
- 1 cup (250 ml) homemade or store-bought tomato sauce, hot
Instructions
- In a bowl, mix together all of the ingredients. Season with salt and pepper. Set aside in the refrigerator until ready to serve.
