Thai Noodles with Vegetables
Ingredients
- 3/4 lb (375 g) wide rice noodles
- 2 tablespoons (30 ml) peanut butter
- 2 tablespoons (30 ml) soy sauce
- 2 tablespoons (30 ml) fish sauce (nuoc mam)
- 2 tablespoons (30 ml) oyster sauce
- 2 tablespoons (30 ml) lime juice (1 lime)
- 1/2 cup (125 ml) chicken broth
- 2 carrots, julienned
- 1 cup (250 ml) snow peas, trimmed and cut diagonally in half
- 1 red bell pepper, julienned
- 3 green onions, sliced
- 2 cloves garlic, finely chopped
- 1 chile pepper, seeded and finely chopped
- 2 tablespoons (30 ml) toasted sesame oil
- 4 cups (1 litre) shredded napa cabbage
- 1/2 cup (125 ml) roasted peanuts, coarsely chopped
- Fresh cilantro
Instructions
- Soak the rice noodles according to the instructions on the package.
