Peach Upside-Down Cake

To prepare this gorgeous upside-down cake, place halved peaches at the bottom of a baking dish before pouring the batter over them. Each slice of cake will then feature a large peach piece, bringing both an aesthetically pleasing effect and an intense summer flavour.

Ingredients

  • ¼ cup (60 ml) honey
  • 2 tbsp sugar
  • 1 tbsp (15 ml) lemon juice
  • 5 peaches, unpeeled, halved and pitted
  • 1 ¼ cups (190 g) unbleached all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 eggs, separated
  • 1 ¼ cups (265 g) sugar
  • ½ cup (115 g) unsalted butter, melted
  • 1 tsp (5 ml) vanilla extract
  • ½ cup (125 ml) milk

Instructions

  1. With the rack in the lowest position, preheat the oven to 350°F (180°C). Generously butter a 9-inch (23 cm) square baking dish.
