Honey and Ginger Roasted Peaches
Don’t feel like spending too much time in the kitchen on dessert? Simply coat the peaches in a honey and ginger syrup before baking them until tender. Serve with ice cream and top with crushed biscotti.
Ingredients
- 1/3 cup (75 ml) honey
- 1 lemon, sliced
- 1 piece 3-inch (7.5-cm) fresh ginger, sliced
- 8 peaches, halved and pitted
- Vanilla ice cream, to taste
- Store-bought biscotti, crushed, to taste
Instructions
- With the rack in the middle position, preheat the oven to 190 °C (375 °F).
- In a small saucepan, bring the honey to a boil with the lemon and ginger. Let steep for 10 minutes. Add the peaches and coat thoroughly.
- Place the peaches, lemon slices and ginger on a baking sheet. Drizzle with the honey and bake for about 20 minutes or until the peaches are tender.
- Serve with vanilla ice cream and biscotti pieces.
