Grilled Fruit Kabobs
Ingredients
- 3/4 cup (180 ml) honey
- The juice of 1 lime
- 1 teaspoon (5 ml) fresh ginger, finely chopped
- 1/2 teaspoon (2.5 ml) ground cinnamon
- 1 teaspoon (5 ml) freshly ground pink peppercorn
- 2 teaspoons (10 ml) fresh mint, chopped
- 3 cups (750 ml) mixed fruit (mango, grape, strawberry, banana, etc..), cut into 1.5-inch (3.75-cm) pieces
- 4 skewers
Instructions
- In a bowl, combine all the marinade ingredients. Add the fruit and let stand for at least one hour at room temperature.
- Preheat the grill to high.
- Thread the fruit on the skewers. Reserve the marinade.
- Grill for 2 to 3 minutes per side.
- Serve over vanilla ice cream or plain yogurt and drizzle with the remaining marinade.
