Ingredients

  • 2 cups (280 g) graham cracker crumbs
  • 2 tbsp sugar
  • 6 tbsp (85 g) unsalted butter, melted
  • 1 pinch salt
  • 3 blocks (250 g each) cream cheese, softened
  • ¾ cup (100 g) icing sugar
  • ¼ cup (60 ml) sour cream
  • 1 tbsp (15 ml) lemon juice
  • ½ vanilla bean, split lengthwise and seeds scraped or 1 tsp (5 ml) vanilla
  • ½ cup (125 ml) 35% whipping cream
  • 1 cup (250 ml) 35% whipping cream
  • ½ cup (125 ml) homemade or store-bought strawberry jam
  • 2 tsp (10 ml) lemon juice
  • 1 ½ cups (255 g) fresh strawberries, halved or quartered (see note)

Instructions

  1. With the rack in the middle position, preheat the oven to 350°F (180°C). Butter the bottom of a 13 x 9-inch (33 x 23 cm) baking dish.
  2. In a bowl, combine all of the ingredients. Gently press along the bottom of the prepared baking dish.
  3. Bake for 12 minutes or until the crust is golden. Let cool.
