Daylily Fritters with Strawberry and Mango Salsa
Ingredients
- 2 cups (500 ml) strawberries, diced
- 1 mango, peeled and diced
- 1 tablespoon (15 ml) honey
- 1 tablespoon (15 ml) fresh mint, chopped
- Grated zest of 1/2 lemon
- 1/2 cup (125 ml) unbleached all-purpose flour
- 1/4 cup (60 ml) cornstarch
- 1 tablespoon (15 ml) sugar
- 1 teaspoon (5 ml) baking powder
- 1/4 teaspoon (1 ml) salt
- 3/4 cup (180 ml) water, approximately
- 1/4 teaspoon (1 ml) vanilla extract
- 10 daylily flowers, without the pistils and with or without the stems
- Flour, for coating
- Oil, for frying
Instructions
- In a bowl, combine all the ingredients and let rest in the refrigerator for about 30 minutes. Set aside.
