Rib Eye Steaks with Red Wine Sauce

Ingredients

  • 4 Rib eye steaks, New York strip steaks or other grilling cuts
  • 1 shallot, finely chopped
  • 1 clove garlic, finely chopped
  • 1 tablespoon (15 ml) olive oil
  • 1 tablespoon (15 ml) butter
  • 1 tablespoon (15 ml) honey
  • 1/2 cup (125 ml) red wine
  • 1 cup (250 ml) veal demi-glace
  • 1 teaspoon (5 ml) mixed peppercorns, ground
  • 1/4 teaspoon (1 ml) star anise, ground
  • Salt and pepper

Instructions

  1. On the grill or a ridged skillet, cook the beef until the desired doneness.
  2. In another pan, sauté the shallot and garlic in the oil, butter and honey. Deglaze with the wine and reduce for 1 minute. Add the demi-glace, pepper and anise. Simmer for 1 minute. Adjust the seasoning.
  3. Drizzle the sauce over the steaks. Delicious with the Spring Barley "Risotto" with Asparagus.
