Almond Shortbread Cookies

Ingredients

  • 1 cup (150 g) unbleached all-purpose flour
  • 3/4 cup (100 g) ground almonds
  • A pinch of salt
  • 1/2 cup (115 g) unsalted butter, softened
  • 3/4 cup (100 g) icing sugar
  • 1/2 tsp (2.5 ml) vanilla
  • 1 egg 




Instructions

  1. In a bowl, combine the flour, ground almonds and salt.
  2. In another bowl, cream the butter, sugar and vanilla with an electric mixer (see note). Add the egg and beat until smooth. Stir in the dry ingredients with a wooden spoon.
  3. On a work surface, shape the dough into a cylinder about 10-inches (25 cm) long and 2 inches (5 cm) in diameter. Wrap in plastic wrap, twisting and tying up both ends. Refrigerate for 3 hours or until the dough is very firm to the touch.
  4. With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper (see note).
  5. On a work surface, unwrap the dough. Cut into 1/2-inch (1 cm) thick slices and place on a baking sheet.
  6. Bake for 15 to 17 minutes or until the cookies begin to brown. Cool completely on a wire rack.
