Spinach Phyllo Bites

Ingredients
- 1 green onion, finely chopped
- 3 garlic cloves, chopped
- 2 tbsp (30 ml) olive oil
- 7 oz (200 g) lean ground beef
- 1/2 tsp dried oregano
- 2 cups (60 g) spinach, chopped
- 6 tbsp (50 g) feta cheese, crumbled
- 1 egg
- 3 sheets of phyllo dough
- 1/4 cup (55 g) butter, melted
Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C) . Line a baking sheet with parchment paper.
- In a saucepan over medium-high heat, soften the onion and garlic in the oil. Add the ground beef and oregano and cook, breaking the meat up with a wooden spoon. Season with salt and pepper. Add the spinach and cook until it has started to wilt. Remove from the heat and let cool. Add the cheese and egg. Stir to combine and adjust the seasoning.
- On a work surface, brush the sheets of phyllo dough with butter and lay them one on top of the other. Cut into 12 squares.
- Place 1 tbsp (15 ml) of the ground beef mixture in the centre of each square. Fold two corners perpendicular to the filling into the centre. Fold in the two other corners and then roll to form a small cylinder. Place on the baking sheet. Brush with the remaining butter.
- Bake for 10 minutes. Serve as hors d’oeuvres.
