Potatoes Baked In The Coals
Ingredients
- 6 large russet potatoes, sliced in half lengthwise
- 6 slices bacon
- 1 onion, cut into slices about 1/4 inch (1/2 cm) thick
- 12 sheets heavy-duty aluminum foil
- Butter to taste (optional)
- Salt and pepper
Instructions
- Preheat the grill, setting the burners to medium, or make a campfire and let it burn down to a bed of coals.
- Generously season the insides of the potatoes with salt and pepper. Lay a folded slice of bacon and an onion slice on the centre of 6 potato halves. Top with the other 6 potato halves
- Wrap each potato tightly in 2 layers of aluminum foil. If using a gas grill, a single layer will do.
- Cook on the grill or in the coals until very tender, about 45 minutes.
- If desired, serve with a pat of butter.
