Spinach and Bacon Salad with Maple Dressing
This gourmet salad is made with endives, radicchio, crisp apple slices and finely chopped celery. It’s dressed with a maple-miso vinaigrette, which has a delightful sweet and umami combination. The salad is then sprinkled with large pieces of caramelized bacon seasoned with coriander seed, pepper and aniseed.
Ingredients
- 1/2 lb (225 g) sliced bacon
- 1 tsp coriander seeds
- 1/2 tsp black peppercorns
- 1/2 tsp anise or fennel seeds
- 2 tbsp maple sugar
- 6 cups (140 g) baby spinach
- 2 celery stalks, thinly sliced
- 2 endives, leaves torn
- 1 small radicchio, leaves torn
- 1 Royal Gala apple, halved, cored and thinly sliced
- 1 shallot, cut into thin rounds

Instructions
- With the rack in the middle position, preheat the oven to 350°F (180°C). Line a baking sheet with a silicone mat or parchment paper.
- Lay the bacon slices out on the baking sheet.
- In a mortar and pestle or coffee grinder, crush the spices. Add the maple sugar and mix well. Sprinkle the spice mixture over both sides of the bacon. Bake for 20 minutes or until the bacon is caramelized and crispy. Drain on a plate lined with paper towels and let cool. On a work surface, coarsely chop the bacon.
