Chicken with Rosé Cider
Ingredients
- 1 1.5 kg chicken
- 1 onion, cubed
- 3 Cortland apples, peeled, cored and cut into quarters
- 3 cloves garlic, chopped
- Melted butter
- 1 1/2 teaspoons (7.5 ml) thyme
- 1 1/2 teaspoons (7.5 ml) dried savory
- Salt and pepper
- 2 cups (500 ml) sparkling rosé cider
- 1 bay leaf
Instructions
- Preheat the oven to 190 °C (375 °F).
- Stuff the chicken with the onion, apples and garlic. Place it in a baking dish. Brush the chicken with melted butter and sprinkle with thyme or savory. Season with salt and pepper.
- Arrange the remaining apples around the chicken. Pour the cider over the apples. Add the bay leaf.
- Bake for about 1 hour 40 minutes, depending on the size of the chicken. When cutting into the meat, the juices must run clear.
- Right out of the oven, remove the bay leaf.
- Serve the chicken with the apples and juices. Delicious with potatoes.
