Cilantro and Lime Potato Purée
Ingredients
- 4 cups (1 litre) potatoes, peeled and cut into cubes (4 to 6 large potatoes)
- 1/4 cup (60 ml) butter
- 1/2 cup (125 ml) milk, approximately
- 1/2 cup (125 ml) fresh cilantro, chopped
- 2 teaspoons (10 ml) lime juice, or to taste
- Salt and pepper
Instructions
- In a saucepan, cook the potatoes in salted boiling water until tender, about 15 minutes. Drain.
- With a masher, mash the potatoes with the butter. With an electric mixer, purée the mixture with the milk, coriander and lime until smooth. Adjust the seasoning.
