Cherry and Strawberry Tartlets
Ingredients
- 1/2 cup (125 ml) sugar
- 1 tablespoon (15 ml) cornstarch
- 1 1/2 cups (375 ml) pitted and halved fresh cherries
- 1 cup (250 ml) quartered fresh strawberries
- 2 tablespoons (30 ml) lemon juice
- 2 tablespoons (30 ml) water
- 1 cup (250 ml) unbleached all-purpose flour
- 2 tablespoons (30 ml) sugar
- 1/4 teaspoon (1 ml) salt
- 1/4 cup (60 ml) cold unsalted butter, cubed
- 3 tablespoons (45 ml) ice water, approximately
- 2 tablespoons (30 ml) canola oil
- 3/4 cup (180 ml) 35% cream
- 2 tablespoons (30 ml) sugar
- 1/2 teaspoon (2.5 ml) vanilla extract
- 6 fresh cherries with the stem, for garnish
- 6 small fresh strawberries with the stem, for garnish
Instructions
- In a saucepan, off the heat, combine the sugar and cornstarch. Add the cherries, strawberries, lemon juice, and water. Stir to combine. Bring to a boil over medium heat and simmer gently for about 15 minutes, stirring frequently. If necessary, skim off the surface during cooking. Let cool. Cover and refrigerate until the mixture is room temperature.
