Black Beans and Wild Rice Salad
Ingredients
- 1 cup (250 ml) wild rice
- 5 cups (1.25 litres) salted water
- 1 cup (250 ml) canned black beans, rinsed and drained
- 1/2 cup (125 ml) celery, diced
- 1/2 cup (125 ml) red bell pepper, diced
- 1 green apple, diced
- 1/2 cup (125 ml) corn kernels
- 1/4 cup (60 ml) red onion, finely chopped
- 2 tablespoons (30 ml) fresh coriander, chopped
- 2 tablespoons (30 ml) fresh mint, chopped
- 2 tablespoons (30 ml) lime juice
- 2 tablespoons (30 ml) olive oil
- Salt and pepper
Instructions
- In a saucepan, bring the rice and water to a boil. Cover and simmer over medium heat for about 1 hour. Drain. Place the cooked rice in a bowl and let cool.
- In a salad bowl, combine the cooled rice with the remaining ingredients. Adjust the seasoning and serve.
- Serve with Ostrich Kebabs with Chimichurri Sauce.
